## Ingredients

- 500 g shrimp, peeled and deveined
- 400 g pasta, such as linguine or fettuccine
- 100 g sun-dried tomatoes, drained and sliced
- 4 × garlic, minced
- 240 ml heavy cream
- 60 g parmesan, grated
- 30 g butter
- 15 ml olive oil
- 2 g chili flakes
- 3 g Italian seasoning
- 5 g salt
- 2 g black pepper, ground
- 10 g parsley, chopped

## Method

1. **Cook the pasta** Bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain, reserving a little cooking water.
2. **Sear the shrimp** Heat the olive oil and butter in a large pan. Season the shrimp with salt, pepper and Italian seasoning. Sear the shrimp until pink and just cooked, then set aside.
3. **Build the sauce** Add the garlic and chili flakes to the pan and cook until fragrant. Stir in the sun-dried tomatoes. Pour in the cream and simmer until slightly thickened.
4. **Combine and finish** Return the shrimp to the pan with the pasta and toss to coat, loosening with pasta water if needed. Stir in the parmesan and adjust the seasoning. Garnish with parsley and serve.
