## Ingredients

- 300 g salmon fillet, skin on, cut into cubes
- 180 g pasta, dried, e.g. linguine or spaghetti
- 250 g cherry tomatoes, halved
- 100 g spinach, fresh
- 3 × garlic, cloves, minced
- 100 g feta, crumbled
- 15 ml olive oil
- 3 g salt
- 1 g black pepper, ground

## Method

1. **Sear the salmon** Heat the olive oil in a large frying pan over medium-high heat. Season the salmon cubes with salt and pepper and sear until golden on all sides. Remove the salmon from the pan and set aside.
2. **Start the pasta** Add the garlic to the same pan and cook until fragrant. Add the cherry tomatoes and cook until they soften and release their juices. Add the pasta and enough water to just cover it, then season with salt.
3. **Cook the pasta** Simmer, stirring regularly, until the pasta is al dente and the liquid has reduced to a creamy sauce.
4. **Finish with spinach and feta** Stir the spinach through the pasta until wilted. Return the salmon to the pan and gently fold it in. Crumble the feta over the top and serve.
