## Ingredients

- 450 g cooked rice, cold, day-old
- 300 g shrimp, peeled and deveined
- 250 g broccoli, cut into small florets
- 2 × eggs, beaten
- 3 × garlic, minced
- 15 g ginger, grated
- 45 ml tamari, soy-free soy sauce
- 15 ml sesame oil
- 30 ml neutral oil, for frying
- 2 × green onion, sliced
- 3 g salt

## Method

1. **Prepare the ingredients** Cut the broccoli into small florets and mince the garlic and ginger. Beat the eggs in a bowl and have the cold cooked rice ready.
2. **Cook the shrimp** Heat part of the oil in a wok over high heat. Sear the shrimp until pink and just cooked through, then set aside.
3. **Scramble the eggs** Add a little more oil to the wok. Pour in the beaten eggs and scramble until just set, then push to the side.
4. **Fry the aromatics and broccoli** Add the garlic and ginger and stir-fry until fragrant. Add the broccoli with a splash of water and stir-fry until bright green and tender-crisp.
5. **Fry the rice** Add the cold rice and press it into the wok, breaking up any clumps. Stir-fry until the rice is hot and lightly toasted.
6. **Season and finish** Return the shrimp, then pour in the tamari and sesame oil and toss to coat. Season with salt, fold in the green onion and serve hot.
