Préparation

  1. Preheat the oven

    • Place the baking tray or pizza stone in the oven and heat to the highest setting.
    Étape 1
  2. Stretch the dough

    • Stretch the pizza dough into a round on a floured surface.
    • Transfer it to the hot baking tray.
    Étape 2
  3. Add the ice

    • Scatter the crushed ice over the raw dough.
    • The ice melts in the oven and mixes with the starch from the dough, creating a thin layer of starchy water on top.
    Étape 3
  4. Bake the pizza

    • Bake until the crust is puffed and golden and a starchy liquid has formed on top.
    Étape 4
  5. Make the cacio e pepe sauce

    • Pull out the pizza and mix the grated pecorino by hand into the starchy water on top, the same way you would make a pasta sauce.
    • Add the butter if using and stir until the sauce is creamy.
    Étape 5
  6. Finish and serve

    • Grind black pepper generously over the top.
    • Drizzle with olive oil and serve immediately.
