Préparation

  1. Prepare the cherries

    • Pit the cherries and set a few aside for decoration.
    • Simmer the remaining cherries briefly with a little sugar until slightly softened, then let them cool.
    Étape 1
  2. Make the mascarpone cream

    • Whisk the egg yolks with the sugar until pale and fluffy.
    • Fold in the mascarpone until smooth.
    • Beat the egg whites to stiff peaks and gently fold them into the mascarpone mixture.
    Étape 2
  3. Soak the ladyfingers

    • Pour the cherry juice into a shallow dish.
    • Quickly dip each ladyfinger in the juice, without soaking it through.

  4. Assemble the tiramisu

    • Line the bottom of a dish with a layer of soaked ladyfingers.
    • Spread half of the mascarpone cream on top.
    • Add a layer of cherries, then repeat with the remaining ladyfingers, cream and cherries.
    Étape 4
  5. Chill

    • Cover the dish and refrigerate until the tiramisu is set.
    Étape 5
  6. Finish and serve

    • Dust the top with cocoa powder just before serving.
    • Decorate with the reserved cherries.
