Préparation
- Étape 1
Make the caramel
- Melt the sugar with the water in a saucepan over medium heat until it turns a golden caramel.
- Pour the caramel into the baking dish and tilt to coat the bottom evenly.
- Étape 2
Melt the chocolate
- Warm the milk in a saucepan over low heat.
- Add the chopped dark chocolate and stir until completely melted and smooth.
- Étape 3
Prepare the custard
- Whisk the eggs with the sugar until pale.
- Whisk in the cocoa powder, the vanilla extract and the warm chocolate milk until fully combined.
- Strain the mixture through a sieve into the dish over the caramel.
- Étape 4
Bake in a water bath
- Place the dish in a larger roasting pan and fill it with hot water halfway up the sides.
- Bake at 160 °C until the flan is just set with a slight wobble in the center.
- Étape 5
Chill and unmold
- Let the flan cool to room temperature, then refrigerate until completely cold.
- Run a knife around the edge and invert onto a plate so the caramel runs over the top.
