Préparation

  1. Make the apple filling

    • Peel and dice the apples.
    • Cook the apples with the granulated sugar and cinnamon in a saucepan over medium heat until softened and slightly caramelised.
    • Set aside to cool.
    Étape 1
  2. Preheat the oven

    • Preheat the oven to 170 °C fan and line an 8x8 inch tin with baking paper.
    Étape 2
  3. Make the blondie batter

    • Beat the softened butter with the light brown sugar and granulated sugar until pale and fluffy.
    • Beat in the egg, egg yolk and vanilla extract.
    • Fold in the plain flour until just combined.
    Étape 3
  4. Assemble

    • Spread half of the blondie batter into the lined tin.
    • Spoon over the cooled apple filling.
    • Cover with the remaining batter and swirl gently.
    Étape 4
  5. Add the topping

    • Mix the granulated sugar and cinnamon and sprinkle evenly over the batter.
    Étape 5
  6. Bake

    • Bake at 170 °C fan for 30-35 minutes until golden and set; bake longer for firmer, cakier blondies and less for gooey ones.
    • Leave to cool completely in the tin, then chill in the fridge overnight before slicing.
