Préparation

  1. Prepare the beans

    • Soak the dried great northern beans overnight, then drain and rinse them.
    • Pick through the beans and remove any stones.
    Étape 1
  2. Load the slow cooker

    • Add the beans, diced onion, salt, black pepper, garlic powder and smoked paprika to the slow cooker.
    • Pour in the chicken broth, starting with the smaller amount for creamier, thicker beans.
    • Add the chopped ham and stir everything together.
    Étape 2
  3. Cook the beans

    • Cover with the lid and cook on low for 6 to 8 hours, or on high for 4 to 6 hours.
    • Check the consistency near the end of cooking and add more broth if needed.
    Étape 3
  4. Thicken the broth

    • About 3 hours in, scoop out a portion of the beans and mash them with a fork, or mash some against the side of the pot.
    • Stir the mashed beans back in so their starches thicken the broth.
    Étape 4
  5. Finish and serve

    • Cook until the liquid has thickened and the beans are creamy.
    • Taste and adjust the seasoning, then serve hot.
    Étape 5
