Préparation

  1. Line the sheet tray

    • Skip the skillet and grab a sheet tray instead.
    • Lay a sheet of parchment paper down on the tray.
    Étape 1
  2. Lay out the bacon

    • Lay the pork (bacon) down nice and slow, side by side, without overlapping.
    Étape 2
  3. Weigh it down for flat bacon

    • Place a second sheet tray on top of the bacon to press it flat.
    • If you don't have a second tray, use another tray or a flat weight.
    • Keep the barcode on the tray, it helps.
    Étape 3
  4. Bake in the oven

    • Pop the tray in the oven and bake until the bacon is straight, crisp and drippy.
    Étape 4
  5. Save the fat and serve

    • Voila: look how straight the bacon is.
    • Save the rendered fat — liquid gold — for later use.
    • That is how you get flat bacon.
