Préparation

  1. Prepare the fruit

    • Wash the grapes well.
    • Dry the grapes extremely well, they must be completely dry for the sugar to stick.
    Étape 1
  2. Skewer the grapes

    • Thread the grapes onto the skewers, three per skewer.
    Étape 2
  3. Make the sugar syrup

    • In a shallow pan, combine the sugar and water in a two-to-one ratio.
    • Make sure the water covers all of the sugar and do not stir with a spoon; at most, move the pan side to side.
    Étape 3
  4. Boil the syrup

    • Bring the syrup to a boil over high heat.
    • As soon as it boils, lower the heat to just above medium so it does not burn.
    • Be patient, it takes a while to reach the right temperature.
    Étape 4
  5. Prepare the ice bath and tray

    • Fill a bowl with cold water and ice.
    • Line a tray or plate with parchment paper.
    Étape 5
  6. Test the syrup

    • Dip a skewer gently into the syrup.
    • Bring it to the ice bath: if the sugar hardens, it is ready; if it stays sticky, keep cooking.
    Étape 6
  7. Coat the fruit

    • Turn off the stove and move the pan next to the ice bath.
    • Dip the grape skewers into the syrup to coat them evenly.
    • Immediately plunge them into the ice bath so the sugar sets.
    Étape 7
  8. Rest and serve

    • Place the skewers on the parchment-lined tray.
    • Let them set, then enjoy.
    Étape 8
