Préparation

  1. Prepare the strawberry must

    • Crush the strawberries into the fermentation bucket.
    • Add the water and the sugar, then stir until the sugar dissolves.
    • Stir in the yeast nutrient and the rehydrated wine yeast.
    Étape 1
  2. Ferment the wine

    • Cover the bucket with an airlock and let it ferment until the yeast has converted the sugar into alcohol.
    • Stir or punch down the fruit cap daily.
    Étape 2
  3. Let the wine clear

    • Siphon the wine off the fruit into a clean carboy.
    • Leave it to clear.
    Étape 3
  4. Infuse with lavender

    • Add the dried lavender flowers to the wine.
    • Let it sit, tasting a sample every few days so the lavender does not turn soapy.
    • Remove the lavender once the flavor is right.
    Étape 4
  5. Stabilize and back sweeten

    • Stabilize the wine with the wine stabilizer.
    • Stir in the simple syrup and the strawberry syrup to taste, keeping it semi-sweet.
    Étape 5
  6. Bottle and age

    • Siphon the wine into bottles and seal them.
    • Let the bottles age before drinking.
