Préparation

  1. Boil the broccoli

    • Bring a pot of salted water to a boil.
    • Drop the broccoli into the boiling water.
    Étape 1
  2. Build the garlic and oil base

    • Pour a good quarter cup of olive oil into the pan, coating the whole bottom — this is the base of the sauce.
    • Add the garlic cloves: 3 smashed and 1 minced.
    • Add about 1/2 teaspoon of chili pepper and give it a stir.
    Étape 2
  3. Stop the garlic from burning

    • The second you smell the garlic, shut off the heat and push the pan to the back.
    • To prevent the garlic from burning, add a little more cold oil to the pan — it will slow it down.
    Étape 3
  4. Add the bread to the water

    • Cut up the 2-3 day old stale bread.
    • Add it to the boiling water with the broccoli for the last 30 seconds.
    Étape 4
  5. Drain

    • Shut off the heat.
    • Strain the bread and broccoli in the sink.
    Étape 5
  6. Combine and mix

    • Pour the bread and broccoli into the pan with the garlic oil.
    • Mix until everything comes together — the soft broccoli mushes into the bread.
    Étape 6
  7. Serve

    • Put a big bowl of green onions in the middle of the table.
    • Take a bite of the pane cotto and a bite of the onion.
    Étape 7
