Préparation

  1. Wash and chop the wings

    • Wash the chicken wings well.
    • Chop them: remove the tips and separate the flats from the drumettes.
    Étape 1
  2. Dry the wings in the fridge

    • Place the wings on a rack or tray and put them in the fridge to dry out.
    • Leave them for a couple of hours (overnight is ideal if you have the time).
    Étape 2
  3. Season the wings

    • Take the wings out of the fridge.
    • Season them generously with the barbecue rub, adding a little oil and salt so it sticks.
    Étape 3
  4. Smoke the wings

    • Preheat the smoker to 190 °C (375 °F).
    • Place the wings in the smoker and leave them for about an hour, checking on them in between.
    Étape 4
  5. Flip the wings

    • With about 20 minutes of cooking left, flip the wings over.
    Étape 5
  6. Serve

    • Take the wings out of the smoker once nicely browned and cooked through.
    • Serve as is, without barbecue sauce if you prefer.
