How to make it
- 1
Fry the black bean paste
Heat the cooking oil with the black soybean paste in a frying pan over medium heat.
Stir well so the paste melts and dissolves evenly.
- 2
Transfer the flavored oil
Pour the oil from the fried black bean paste into another frying pan, leaving the paste aside.
- 3
Cook the pork
Stir-fry the pork in the black bean paste oil over low heat so the pork fat renders out and browning develops.
Turn to high heat and add the soy sauce to add flavor.
- 4
Add the onions and green onions
Add the onions and green onions in several batches, stirring between each addition.
Repeat the additions every minute so they fry rather than steam.
- 5
Season the sauce
Add the sugar, oyster sauce, MSG and the fried black soybean paste and mix well.
Taste and adjust the seasoning before thickening.
- 6
Simmer the sauce
Pour in the water and bring to a boil.
- 7
Thicken with starch slurry
Mix the starch with the water and pour it into the sauce.
Stir immediately and constantly as soon as it is poured, then turn off the heat.
- 8
Boil the noodles
Boil the noodles, then rinse them in cold water and drain.
- 9
Assemble and serve
Place the noodles in a bowl and spoon the sauce over them.
Top with fried eggs and cucumber as garnish.
Sprinkle with red chili powder if desired.
Cook what you saved.
