paso a paso

Preparación

  1. Fry the black bean paste

    • Heat the cooking oil with the black soybean paste in a frying pan over medium heat.
    • Stir well so the paste melts and dissolves evenly.
    Paso 1
  2. Transfer the flavored oil

    • Pour the oil from the fried black bean paste into another frying pan, leaving the paste aside.
    Paso 2
  3. Cook the pork

    • Stir-fry the pork in the black bean paste oil over low heat so the pork fat renders out and browning develops.
    • Turn to high heat and add the soy sauce to add flavor.
    Paso 3
  4. Add the onions and green onions

    • Add the onions and green onions in several batches, stirring between each addition.
    • Repeat the additions every minute so they fry rather than steam.
    Paso 4
  5. Season the sauce

    • Add the sugar, oyster sauce, MSG and the fried black soybean paste and mix well.
    • Taste and adjust the seasoning before thickening.
    Paso 5
  6. Simmer the sauce

    • Pour in the water and bring to a boil.
    Paso 6
  7. Thicken with starch slurry

    • Mix the starch with the water and pour it into the sauce.
    • Stir immediately and constantly as soon as it is poured, then turn off the heat.
    Paso 7
  8. Boil the noodles

    • Boil the noodles, then rinse them in cold water and drain.
    Paso 8
  9. Assemble and serve

    • Place the noodles in a bowl and spoon the sauce over them.
    • Top with fried eggs and cucumber as garnish.
    • Sprinkle with red chili powder if desired.
