paso a paso

Preparación

  1. Brown the lamb

    • Heat the olive oil in a large frying pan over high heat.
    • Add the ground lamb and fry until well browned, breaking it up with a spoon.
    • Season with salt and black pepper.
    Paso 1
  2. Soften the vegetables

    • Add the onion, carrot and garlic to the pan.
    • Fry until the vegetables start to soften and colour.
    Paso 2
  3. Build the filling

    • Stir in the tomato paste, Worcestershire sauce, rosemary and thyme.
    • Sprinkle over the flour and cook, stirring, for a minute.
    • Pour in the red wine and let it bubble away, then add the chicken stock.
    • Simmer until the sauce has thickened.
    Paso 3
  4. Cook the potatoes

    • Boil the potatoes in salted water until completely tender.
    • Drain well and let the steam escape for a minute.
    Paso 4
  5. Make the mash

    • Mash the potatoes until smooth.
    • Beat in the butter, warm milk and egg yolks.
    • Season with salt and pepper and stir through most of the parmesan.
    Paso 5
  6. Assemble the pie

    • Heat the oven to 200 °C.
    • Spoon the lamb filling into a baking dish.
    • Spread the mash over the top and rough up the surface with a fork.
    • Scatter over the remaining parmesan.
    Paso 6
  7. Bake and serve

    • Bake until the top is golden and the filling is bubbling.
    • Rest for a few minutes before serving.
    Paso 7
