Preparación

  1. Slow-roast the garlic

    • Halve the garlic heads and set them cut side up in a small oven dish or frying pan.
    • Drizzle generously with olive oil, season with salt and cover tightly with foil.
    • Roast until the cloves are completely soft and golden.
    Paso 1
  2. Make the garlic oil

    • Squeeze the soft roasted cloves out of their skins into a bowl.
    • Mash them with a fork together with the roasting oil, chilli flakes and oregano.
    Paso 2
  3. Heat the oven

    • Place a baking tray in the oven and preheat to its highest setting.
    Paso 3
  4. Shape the base

    • Stretch the dough on a floured surface into a round, keeping a slightly thicker rim.
    • Transfer it to baking paper and brush the surface with the garlic mixture.
    Paso 4
  5. Bake the pizza

    • Slide the pizza onto the hot tray and bake until the crust is puffed and golden.
    • Scatter the grated Parmigiano over the hot pizza and finish with a drizzle of olive oil and extra oregano.
