Preparación

  1. Season the salmon

    • Cut the skinless salmon fillet into individual portions

    Paso 1
  2. Clean and season the shrimp

    • Rinse the shrimp with water and vinegar, then drain
    • Toss with olive oil and the same seasonings used on the salmon
    Paso 2
  3. Boil the potatoes

    • Bring a pot of water with salt to a boil
    • Add the red skin potatoes and boil until fork tender
    Paso 3
  4. Mash the potatoes

    • Mash the drained potatoes with a potato masher
    • Add butter and heavy whipping cream
    • Season with garlic paste, ranch powder, garlic powder and onion powder, then mix well

    Paso 5
  6. Sear the shrimp

    • Add the shrimp to the same pan and sear
    • Toss with the pan juices, then remove the shrimp and set aside
    Paso 6
  7. Prepare the corn

    • Microwave the fiesta corn and place it in a bowl
    Paso 7
  8. Make the Cajun cream sauce

    • Melt butter in the pan and add the minced garlic
    • Pour in the heavy whipping cream and stir constantly so it does not clump
    • Add the Cajun seasonings, parmesan cheese and more cayenne, then stir until smooth
    Paso 8

    • Plate the mashed potatoes, salmon, shrimp and corn, then pour the sauce over the top
    • Divide everything into containers with broccoli for the week
    Paso 9
