Préparation

  1. Marinate the chicken

    • Cut the chicken against the grain into thin strips.
    • Add soy sauce, oyster sauce, oil, cornstarch, baking soda, half the garlic and half the ginger.
    • Mix well and set aside to marinate while you prep the veggies and sauce.
    Étape 1
  2. Prep the veggies

    • Slice the red bell pepper, carrots and shiitake mushrooms.
    • Trim the snow peas.
    • Cut the green onions into small pieces, keeping the whites and greens separate.
    • Use about 1/2 cup of each veggie.
    Étape 2
  3. Make the sauce

    • Combine soy sauce, oyster sauce, dark soy sauce, sesame oil, broth (or water), sugar and a little white pepper.
    • Taste and adjust — it's already salty, so no extra salt needed.
    Étape 3
  4. Sear the chicken

    • Heat the wok with some oil.
    • Add the chicken and spread it into a single layer so each piece touches the pan.
    • Leave it alone until it starts cooking around the edges, then sauté and spread it back out.
    • Cook another minute, then remove the meat and set aside.
    Étape 4
  5. Aromatics and harder veggies

    • Add more oil if needed, then the remaining garlic and ginger.
    • Deglaze with Shaoxing wine and let it cook out.
    • Add the harder veggies (carrots, bell peppers, whites of the green onions) and cook for a minute.
    Étape 5
  6. Cook the noodles

    • Meanwhile, cook the egg noodles according to package directions.
    • Blanch them in hot water, then rinse under cold water and drain.
    Étape 6
  7. Finish the lo mein

    • Add the remaining veggies to the wok and sauté — with a hot wok this only takes a minute.
    • Add the noodles, the sauce and the chicken back in.
    • Sauté to combine until glossy and saucy.
    • Garnish with green onions and enjoy.
