Bereiding

  1. Mix the dough base

    • In a microwave-safe bowl, mix together the glutinous rice flour, corn starch, sugar, milk and strawberry food colouring.
    • Mix until everything is dissolved completely.
    Stap 1
  2. Steam the dough

    • Cover the bowl with plastic wrap.
    • Steam until the dough becomes translucent.
    Stap 2
  3. Add butter and knead

    • Add the butter and mix until the dough is well combined.
    • Knead until well combined and the dough becomes soft and stretchy.
    • Let the dough cool.
    Stap 3
  4. Make the filling

    • In a mixing bowl, add the non-dairy whipping cream, dairy whipping cream, condensed milk and strawberry puree.
    • Whip with a hand mixer until stiff peaks form.
    Stap 4
  5. Assemble the mochi

    • Dust the working area and the dough with cooked glutinous rice flour so it won't be too sticky.
    • Flatten the dough into a circular shape.
    • Pipe the filling in the center of the mochi wrapper, then pinch the four corners together and pinch the remaining corners to seal.
    Stap 5
  6. Finish the mochi

    • Tap the bottom of the mochi with cooked glutinous rice flour or cornstarch.
    • Brush the assembled mochi gently to remove excess flour.
