Method

  1. Boil the rice noodles

    • Bring a pot of water to a boil.
    • Add the rice noodles and cook for 5 to 6 minutes until done.
    Step 1
  2. Make the peanut sauce

    • In a bowl or small jug, combine 1.5 tbsp light soy sauce, 1 tbsp vinegar and 0.5 tbsp dark soy sauce.
    • Add a good amount of chilli crisp, to taste.
    • Add some sesame oil.
    • Add a heaped tablespoon (about 1.5 tbsp) of peanut butter.
    • Add 2 to 3 tbsp of water.
    • Mix, mix, mix — it will look clumpy and weird at first, that's normal, just keep mixing until smooth.
    Step 2
  3. Combine and garnish

    • Once the noodles are done, rinse them with cold water.
    • Add the noodles to the sauce and mix everything together.
    • Garnish with sliced spring onion and sesame seeds.
    • Serve straight away.
