Method

  1. Marinate the beef

    • Cut the flank steak into thin strips.
    • Add half of the garlic and ginger to the meat.
    • Add cornstarch, baking soda, oyster sauce, soy sauce, oil and ginger & garlic sauce.
    • Mix well and let it marinate.
    Step 1
  2. Prep the aromatics and broccoli

    • Chop up the ginger.
    • Smash and chop lots of garlic, saving the rest for cooking.
    • Chop up the broccoli into florets.
    Step 2
  3. Make the sauce

    • In a bowl combine chicken broth, soy sauce, oyster sauce, dark soy sauce, sesame oil, brown sugar and white pepper.
    • No additional salt is needed because the sauces are already very salty.
    • Give it a taste and mix well.
    Step 3
  4. Sear the beef

    • Get your pan or wok nice and hot and oil it up.
    • Add in the beef and flatten the pieces, then leave it alone.
    • Once you see it cooking around the edges, saute it up.
    • After about a minute, remove the meat and set aside.
    Step 4
  5. Cook the broccoli

    • Add a little more oil to the pan.
    • Add in the broccoli and saute.
    • Pop a lid on and let it cook a few minutes until it has a beautiful green color.
    Step 5
  6. Build the sauce

    • Add the rest of the garlic and ginger and saute.
    • Optionally deglaze with Shaoxing wine for extra depth of flavor.
    • Add the sauce and let it come up to a boil.
    • Add the cornstarch slurry and cook until the sauce is thick, silky and gorgeous.
    Step 6
  7. Finish and serve

    • Once the sauce starts to thicken back up, add the meat back in.
    • Cook another minute or so until the sauce wraps around everything beautifully.
    • Serve over white rice.
    • Garnish with green onion and sesame seeds.
