Method

  1. Season the beef

    • In a bowl, coat the beef cubes with the salt, black pepper, onion powder, garlic powder and paprika.
    • Add the olive oil and bicarbonate of soda and mix well.
    Step 1
  2. Brown the beef

    • Sear the beef in a hot pot until well browned on all sides.
    • Remove the beef from the pot and set aside.
    Step 2
  3. Build the base

    • Add the butter and garlic to the pot and cook until fragrant.
    • Stir in the plain flour and cook for a few minutes.
    Step 3
  4. Simmer the stew

    • Pour in the beef stock slowly while stirring continuously to avoid lumps.
    • Return the browned beef to the pot and add the water until the beef is just covered.
    • Bring to a simmer and cook until the beef is tender; larger chunks need longer.
    Step 4
  5. Finish the stew

    • Let the stew reduce and thicken to your liking.
    • Stir in the mixed herbs and double cream.
    Step 5
  6. Prepare the carrots

    • Slice the carrots lengthways and place them in a bowl.
    • Toss with the salted butter, chopped garlic, maple syrup and mixed herbs.

  7. Air fry the carrots

    • Air fry the carrots until cooked through and the edges are crisp.
    Step 7
  8. Boil the potatoes

    • Boil the peeled potatoes in salted water until fork tender.
    • Drain well.
    Step 8
  9. Make the creamy garlic mash

    • Mash the potatoes with a potato masher or a fork.
    • Add the milk, then the butter, mixed herbs, garlic and double cream.
    • Mix until thoroughly combined and smooth.
    Step 9
  10. Serve

    • Spoon the creamy mash onto plates, top with the beef stew and maple glazed carrots.
    • Scatter over the chopped garlic chives.
    Step 10
