step by step

Method

  1. Season the burger meat

    • Put the burger meat in a bowl and season with the salt and black pepper.
    • Mix gently until just combined, then divide into equal balls.
    Step 1
  2. Fill the beef balls

    • Flatten each ball in your palm and press a hollow in the centre.
    • Place a cube of cheese and a little chutney in the hollow, then seal the meat around the filling to form a neat ball.
    Step 2
  3. Sear the beef truffles

    • Heat the oil in a frying pan over high heat.
    • Sear the beef balls on all sides until well browned but still pink inside.
    • Set aside to cool slightly.
    Step 3
  4. Wrap in pastry

    • Lay the pastry squares on a work surface.
    • Place a beef ball on each square and fold the pastry up around it, pinching the seams to seal completely.
    Step 4
  5. Glaze and bake

    • Arrange the wrapped truffles on a baking tray and brush all over with the beaten egg.
    • Bake at 200 °C until the pastry is puffed and golden.
    Step 5
  6. Serve

    • Serve the beef truffles hot with extra chutney on the side.
