Method

  1. Bake the chocolate sponge

    • Whisk the eggs and caster sugar until pale and thick.
    • Fold in the sifted flour, cocoa powder and baking powder, then the melted butter and milk.
    • Divide between two lined tins and bake at 180 °C until springy.
    Step 1
  2. Make the berry amaretto syrup

    • Warm the berries, sugar and amaretto in a saucepan until the sugar dissolves and the berries soften.
    • Strain the syrup and set the berries aside for the filling.
    Step 2
  3. Whip the cream

    • Whip the cold double cream with the icing sugar to soft peaks.
    Step 3
  4. Assemble the cake

    • Brush the sponge layers generously with the warm berry amaretto syrup.
    • Spread cream over the first layer and scatter over the amaretto berries.
    • Top with the second layer, brush with syrup and cover the whole cake with the remaining cream.
    Step 4
  5. Make the chocolate shards

    • Spread the melted dark chocolate thinly over a lined tray and let it set.
    • Break or cut into shards and press them around the sides of the cake for a snowy woodland tree effect.
