Method

  1. Whip the Brie and cream cheese

    • Whip the Brie with a little bit of cream cheese until nice and smooth.
    Step 1
  2. Swirl in the fig jam

    • Swirl in some fig jam (any jam you like works).
    • Don't mix it in too well — you want it streaky.
    Step 2
  3. Chill the cheese mixture

    • Let the mixture sit in the fridge to firm up.
    Step 3
  4. Make the herb oil

    • Blanch the chives and basil.
    • Blend them for a little while with olive oil.
    • Strain the oil.
    Step 4
  5. Shape the cheese ball

    • Put the chilled cheese mixture on a little plate.
    • Make a little mountain so it looks like a cheese ball.
    Step 5
  6. Add the Petit Basque florets

    • Cut the Petit Basque into little florets or coral shapes.
    • Stick the cheese florets all around the cheese ball.
    • It doesn't have to be perfect — just go all around.
    Step 6
  7. Finish and garnish

    • Add the herb oil for color and taste.
    • Scatter over some chive blossoms.
    • Serve and enjoy.
