Method

  1. Roast the sweet potatoes

    • Place the whole sweet potatoes on the grill or in a hot oven.
    • Roast until they puff up a bit and the skin starts breaking away, with the sugars oozing out.
    Step 1
  2. Melt the butter

    • Melt a little butter in a hot pan (no need for the barbecue to be on).
    Step 2
  3. Char the citrus

    • Take a mandarin (or an orange, tangerine, or any citrus you like).
    • Char it to heat up the juices inside and bring out the sweetness.
    • Squeeze the juice into the melted butter.
    Step 3
  4. Build the syrup

    • Add about an ounce of Grand Marnier to the butter.
    • Add a little maple syrup.
    • Squeeze a little more of the citrus juice over the mixture.
    Step 4
  5. Inject the sweet potato

    • Inject the syrup inside the sweet potato, doing it very slowly so it doesn't squirt out.
    • Pull the injector out and make a little well in the potato.
    Step 5
  6. Finish and serve

    • Spoon some more of the sweet buttery syrup over the potato.
    • Add a little fresh herb.
    • Add a little smoked salt.
    • Serve and enjoy.
