Method

  1. Season and sear the chicken

    • Pat the chicken breast pieces dry and season with salt, black pepper, paprika and Italian seasoning.
    • Heat the olive oil in a large pot over medium-high heat and sear the chicken until golden on all sides.
    • Remove the chicken from the pot and set aside.
    Step 1
  2. Soften the aromatics

    • Add the onion to the same pot and cook until soft and translucent.
    • Stir in the garlic and sun-dried tomatoes and cook until fragrant.
    Step 2
  3. Cook the orzo in one pot

    • Return the chicken to the pot, then add the orzo and chicken stock.
    • Stir well, bring to a simmer and cook until the orzo is al dente, stirring occasionally so it does not stick.
    Step 3
  4. Make it creamy

    • Pour in the coconut milk and stir to combine.
    • Simmer gently until the sauce thickens and coats the orzo.
    Step 4
  5. Wilt the spinach and serve

    • Fold in the fresh spinach and cook until wilted.
    • Taste and adjust the seasoning, then serve hot straight from the pot.
