step by step

Method

  1. Cook the pasta

    • Bring a large pot of water to a boil and salt it generously.
    • Cook the tortiglioni until al dente, following the package instructions.
    • Drain, reserving a cup of the pasta cooking water.
    Step 1
  2. Sauté the aromatics

    • In a large skillet over medium heat, add the olive oil, shallots and garlic.
    • Sauté for 1 minute, then stir in the red pepper flakes.
    Step 2
  3. Add tomato paste and vodka

    • Mix in the tomato paste.
    • Pour in the vodka and let it cook so the alcohol evaporates.
    Step 3
  4. Build the creamy sauce

    • Pour in the heavy cream and add part of the grated Parmigiano Reggiano.
    • Season with a pinch of salt and the black pepper.
    • Stir well and reduce the heat to low.
    Step 4
  5. Toss the pasta in the sauce

    • Add the al dente pasta to the skillet and raise the heat to medium.
    • Add the remaining Parmigiano Reggiano and a splash of the reserved pasta water.
    • Stir until the pasta is well coated, adding more pasta water if the sauce is too thick.
    Step 5
  6. Serve with burrata

    • Serve the pasta in bowls.
    • Sprinkle with chopped parsley, top with a piece of burrata and garnish with red pepper flakes.
    • Drizzle with olive oil and finish with grated Parmigiano Reggiano.
