step by step

Method

  1. Mix the dry ingredients

    • Combine the flour, sugar, baking powder, baking soda and salt in a bowl.
    • Whisk together and set aside.
    Step 1
  2. Mix the wet ingredients

    • In another bowl, combine the buttermilk, milk, melted unsalted butter, vanilla and egg.
    • Whisk until smooth.
    Step 2
  3. Combine into a batter

    • Slowly pour the wet ingredients into the dry mixture while folding.
    • Do not over-whisk; lumps are good.
    Step 3
  4. Rest the batter

    • Let the batter rest so the pancakes turn out fluffy.
    Step 4
  5. Heat the pan

    • Preheat a skillet over medium-low heat, the lowest medium you can get.
    • Add a little oil and butter to the pan for crispy edges.
    Step 5
  6. Cook the pancakes

    • Pour in the batter and cook until small air bubbles form.
    • Flip the pancake and do not pat it down, so it stays fluffy.
    • Cook until the bottom is crispy, then remove from the pan and immediately add butter.
    Step 6
  7. Repeat and serve

    • Repeat with the remaining batter until you have a perfect stack.
    • Serve immediately with butter.
    Step 7
