Method

  1. Marinate the chicken

    • Slice the chicken breasts in half horizontally into thinner cutlets.
    • Lightly score in a criss-cross pattern.
    • Coat with olive oil, salt, pepper, garlic powder, onion powder and paprika.
    Step 1
  2. Make the mashed potatoes

    • Peel and rinse the Yukon Gold potatoes.
    • Boil in heavily salted water until fork-tender.
    • Drain and steam-dry for 10 minutes.
    • Mash with softened butter, heavy cream, salt and pepper until smooth and creamy.
    Step 2
  3. Sear the chicken

    • Heat a little olive oil and butter in a skillet over medium-high heat.
    • Sear the chicken for 1–2 minutes per side until golden, then remove.
    • The chicken will finish cooking in the sauce.
    Step 3
  4. Make the honey garlic sauce

    • In the same skillet, sauté the garlic for 30 seconds.
    • Add chicken broth, honey, soy sauce, dark soy sauce, vinegar and red pepper flakes.
    • Simmer briefly, then gradually stir in the cornstarch slurry until slightly thickened.
    Step 4
  5. Finish the chicken

    • Return the chicken to the sauce and simmer, spooning sauce over top, until cooked through (165°F).
    • Remove from heat and swirl in cold butter for a rich, glossy finish.
    Step 5
  6. Cook the green beans

    • Sauté the green beans with a splash of olive oil and water.
    • Season lightly with salt and pepper and cook until tender-crisp.
    Step 6
  7. Serve

    • Plate the chicken over the creamy mash with the green beans on the side.
    • Spoon the glossy honey garlic sauce over the chicken.
    Step 7
