step by step

Method

  1. Make the chicken meatball mixture

    • In a bowl, combine the ground chicken, chopped red onion, garlic, egg, olive oil, salt, pepper, dill, lemon pepper seasoning, oregano and crumbled feta.
    • Mix everything together until evenly combined.
    Step 1
  2. Shape the meatballs

    • Roll the mixture into evenly sized balls, about the size of your palm.
    • Place them on a piece of foil in the air fryer basket, leaving space between them.
    Step 2
  3. Air fry the meatballs

    • Air fry at 190 °C for about 12 minutes.
    • Flip the meatballs halfway through cooking, until golden and cooked through.
    Step 3
  4. Start the manestra

    • In a saucepan, combine the orzo and chicken broth, using twice as much liquid as pasta.
    • Bring to a boil over high heat.
    Step 4
  5. Simmer the orzo

    • Lower the heat to low, then add the butter, salt and pepper.
    • Cover and simmer until the orzo is creamy and tender.
    Step 5
  6. Serve

    • Spoon the manestra onto plates alongside the meatballs.
    • Finish with grated parmesan on top.
