Method
- Step 1
Preheat and prepare
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Step 2
Make the dough
- Cream together the butter and sugar.
- Add the egg and vanilla and mix until blended.
- Slowly mix in the flour, baking powder and salt.
- Step 3
Shape the cookies
- Scoop the dough into balls and roll in sugar.
- Place on the prepared pans and flatten each cookie slightly.
- Make an indentation for the eyes and fill with jam.

Bake
- Bake until set and lightly golden.
- Step 5
Cool
- Cool slightly, then move to a cooling rack to cool completely.

Melt the chocolate
- Melt the chocolate and coconut oil in the microwave in 15 second increments.
- Step 7
Decorate
- Place the melted chocolate in a piping bag and decorate the cookies.
