Method

  1. Mix the seasoning

    • Measure the brown sugar, sage, salt, black pepper, garlic powder, dried thyme, cayenne and cloves into a bowl.
    Step 1
  2. Combine with the beef

    • Add the water and the ground beef.
    • Mix thoroughly but do not overmix, or the patties will be tough.
    Step 2
  3. Shape the patties

    • Spread the meat about 1/2 inch thick on a baking sheet.
    • Cut out rounds with a 2 1/2 to 3 inch diameter glass or jar.
    • Gather the remaining meat, flatten it out and cut more patties until all the meat is used.
    Step 3
  4. Freeze for later (optional)

    • Freeze the patties on a tray, then transfer them to a freezer bag.
    Step 4
  5. Cook in a skillet

    • Cook over medium-high heat until well browned and no longer pink inside, about 3 to 4 minutes per side.
    Step 5
  6. Or cook in the air fryer

    • Arrange the patties in a single layer and brush the tops with oil so they don't dry out.
    • Cook at 400 °F until browned outside and fully cooked inside.
    Step 6
