step by step

Method

  1. Prepare the white cabbage salad

    • Slice the cabbage into long thin pieces using a vegetable grater or a knife.
    • In a large bowl, mix the cabbage with the onion, vinegar, oil, sugar, salt and pepper.
    • Knead with your hands for a few minutes, then cover and let it sit for a few hours or ideally overnight in the refrigerator.
    Step 1
  2. Prepare the red cabbage salad

    • Slice the red cabbage into long thin pieces.
    • Mix with the onion, red wine vinegar, sugar, salt and pepper and knead well with your hands.
    • Cover and let it marinate for a few hours or overnight in the refrigerator.
    Step 2
  3. Make the dough

    • Put the flour, salt, sugar and yeast in a bowl.
    • Gradually add the lukewarm water and the yogurt and knead for at least 10 minutes until you have a smooth dough that no longer sticks to the bowl or your fingers; the dough should still be soft.
    • Cover the dough and let it rise until it doubles in volume.
    Step 3
  4. Shape and glaze the breads

    • Preheat the oven to 250 °C top/bottom heat.
    • Divide the dough into 6-8 pieces and let them rest covered on a baking sheet.
    • Mix the yogurt and egg yolk, spread a tablespoon of the mixture on each piece and shape into round breads.
    • Sprinkle with sesame seeds and black cumin seeds and let them rest again.
    Step 4
  5. Bake the breads

    • Bake the breads at 250 °C top/bottom heat until golden brown.
    • After removing them from the oven, immediately cover the breads with a kitchen towel to retain their moisture and keep them soft.
    Step 5
  6. Marinate the meat

    • Slice the chicken into thin slices.
    • Mix the meat with the onions, shallot, paprika, coriander, cumin, chili flakes, oregano, salt, cinnamon, black pepper, olive oil and yogurt.
    • Marinate for at least an hour, or even better overnight in the refrigerator.
    Step 6
  7. Cook the meat

    • Thread the marinated meat onto long skewers or cook it in a pan until browned and cooked through.
    Step 7
  8. Make the onion salad

    • Slice the red onions thinly and mix with the chopped parsley.
    • Season with salt, lemon juice, pomegranate syrup and sumac.
    Step 8
  9. Make the tzatziki

    • Grate the cucumber using a vegetable grater and squeeze out any excess water if your yogurt is runny.
    • Mix the cucumber with the yogurt, crushed garlic, dill, salt, olive oil and lemon juice.
    Step 9
  10. Assemble the döner kebab

    • Fill the warm breads with the meat, white and red cabbage salad, onion salad and tzatziki.
    • Add cucumbers, lettuce, tomatoes and feta cheese as desired and serve.
    Step 10
