step by step

Method

  1. Crisp the bacon

    • Cook the diced bacon in a pan over medium-high heat until crisp.
    • Remove the bacon and let it drain, keeping the fat in the pan.
    Step 1
  2. Soften the onion

    • Add the white onion to the same pan over medium-high heat.
    • Stir and sauté until fragrant and softened.
    Step 2
  3. Build the bacon jam

    • Add the espresso, apple cider vinegar, brown sugar and fresh raspberries.
    • Season with salt and pepper, then stir the bacon back in.
    • Simmer, stirring occasionally, until thick and jammy.
    Step 3
  4. Smash the patties with jalapeños

    • Place the thinly sliced jalapeños on top of the beef balls.
    • Smash them down flat in a hot pan; a few slices may fall off, just press them back on.
    Step 4
  5. Melt the cheese

    • Top each patty with Havarti slices.
    • Cook until the cheese is nicely melted, then remove the burgers from the pan.
    Step 5
  6. Assemble the burgers

    • Spread a generous layer of whipped cream cheese on the bottom bun.
    • Stack two jalapeño patties on top.
    • Finish with a spoonful of bacon jam and close with the top bun.
