Method

  1. Cook the bacon

    • Remove the bacon, crumble it and set aside, leaving about a tablespoon of bacon grease in the pot.
    Step 1
  2. Brown the beef with onions and spices

    • Add the ground beef and diced onion to the pot.
    • Season with garlic powder, onion powder, smoked paprika, salt and pepper.
    • Cook until browned, draining excess grease if needed.

  3. Add garlic and butter

    • Stir in the minced garlic and butter.
    • Cook until fragrant.
    Step 3
  4. Simmer the potatoes

    • Add the diced potatoes and chicken broth and stir well.
    • Bring to a boil, then reduce the heat and simmer until the potatoes are fork-tender.
    Step 4
  5. Mash some of the potatoes

    • Mash some of the potatoes directly in the pot to thicken the soup, leaving some chunks.
    Step 5
  6. Make it creamy

    • Reduce the heat to low.
    • Stir in the softened cream cheese, heavy whipping cream and grated Parmesan until smooth and creamy.
    Step 6
  7. Melt in the cheddar

    • Add the shredded sharp cheddar and stir until melted.
    • Adjust the thickness with a little extra broth if needed.
    Step 7
  8. Serve with toppings

    • Ladle the soup into bowls.
    • Top with the crispy bacon, extra shredded cheddar, chopped green onions and extra Parmesan.
    Step 8
