step by step

Method

  1. Start the rice

    • Get your rice going first so it's fluffy and ready when the bowls are assembled.
    Step 1
  2. Brown the beef

    • While the rice cooks, heat a little oil in a pan and brown the ground beef, breaking it up, until it gets really nice and crispy.
    Step 2
  3. Add aromatics

    • Add the scallion whites, grated garlic and grated ginger on top of the beef so none of it burns.
    • Break everything up and stir it into the beef.
    Step 3
  4. Season the beef and set aside

    • Season the beef with soy sauce and chili crisp.
    • Stir to combine, then remove the beef from the pan and set aside.
    Step 4
  5. Bloom the curry paste

    • Add the curry paste right into the same pan and let it bloom for a minute.
    Step 5
  6. Build the broth

    • Pour in the coconut milk and beef broth.
    • Season with soy sauce, fish sauce and a little bit of sesame oil.
    Step 6
  7. Simmer the broth

    • Let the broth simmer so the flavors can come together.
    • Finish with a little squeeze of lime.
    Step 7
  8. Blanch the bok choy

    • You can add the bok choy right into the broth to blanch, or cook it separately for a prettier presentation.
    Step 8
  9. Assemble the bowls

    • Pile the fluffy rice into bowls.
    • Add the crispy beef and the bok choy.
    • Ladle the hot broth right on top to warm everything through.
    • Garnish with the reserved scallion greens and serve.
    Step 9
