step by step

Method

  1. Hollow out the watermelon

    • Cut a lid off the watermelon and scoop out all the flesh with a spoon, keeping the rind intact.
    • Blend the flesh and strain it through a sieve to get clear watermelon juice.
    Step 1
  2. Prepare the gelatin

    • Bloom the gelatin in a little cold water until it swells.
    • Warm the coconut water gently and stir in the bloomed gelatin until fully dissolved, without boiling.
    Step 2
  3. Mix the jelly

    • Stir the watermelon juice into the coconut water and gelatin mixture.
    • Taste and adjust; the watermelon juice brings enough sweetness.
    Step 3
  4. Add the fruit

    • Fold the strawberries, raspberries, blueberries, grapes and cherries into the jelly mixture.
    Step 4
  5. Fill and set

    • Pour the mixture back into the hollowed watermelon rind.
    • Refrigerate until completely set.
    Step 5
  6. Slice and serve

    • Slice the watermelon into wedges or rings and serve cold.
