How to make it

  1. 1

    Prepare the ingredients

Cut the broccoli into small florets and mince the garlic and ginger.

Beat the eggs in a bowl and have the cold cooked rice ready.

  2. 2

    Cook the shrimp

Heat part of the oil in a wok over high heat.

Sear the shrimp until pink and just cooked through, then set aside.

  3. 3

    Scramble the eggs

Add a little more oil to the wok.

Pour in the beaten eggs and scramble until just set, then push to the side.

  4. 4

    Fry the aromatics and broccoli

Add the garlic and ginger and stir-fry until fragrant.

Add the broccoli with a splash of water and stir-fry until bright green and tender-crisp.

  5. 5

    Fry the rice

Add the cold rice and press it into the wok, breaking up any clumps.

Stir-fry until the rice is hot and lightly toasted.

  6. 6

    Season and finish

Return the shrimp, then pour in the tamari and sesame oil and toss to coat.
