How to make it
- 1
Prep the bok choy and roll the beef
Wash and cut the baby bok choy; it will be the base of the dish.
Wrap a small bundle of enoki mushrooms with a slice of thinly sliced beef, repeating until all the beef and mushrooms are used.
- 2
Make the sauce
In a bowl, combine 60 ml soy sauce, 60 ml water, 1 tbsp minced garlic, 2 tbsp sweetener (agave), 1 tsp rice vinegar and 1 tsp gochugaru chili flakes.
Taste and adjust with more sweetener or soy sauce if needed.
- 3
Steam the bok choy
In a wok or wide pan, add 60 ml water and the bok choy.
Cover and steam for 1-2 minutes.
- 4
Cook the enoki beef rolls
Arrange the enoki beef rolls on top of the bok choy (place any extra beef in the middle).
Pour the sauce over everything.
Cover and cook for 5-7 minutes, until the mushrooms look done.
- 5
Add the eggs
Whisk 2 eggs with salt and pepper.
Pour the egg mixture on top of the beef rolls.
Cover and cook for an additional 1-2 minutes.
- 6
Finish and serve
Top with sliced green onion.
