step by step

Method

  1. Make the apple pie filling

    • In a large saucepan over medium-high heat, add the butter, diced apples, brown sugar, maple syrup, cinnamon, apple pie spice and salt.
    • Cook until the apples start to soften, stirring occasionally.
    • Mix the cornstarch and water into a slurry, pour it into the apple mixture and cook until thickened.
    • Remove from the heat, stir in the vanilla and set aside to cool completely.
    Step 1
  2. Activate the yeast

    • Pour the warm milk into a small bowl.
    • Add part of the granulated sugar and sprinkle the yeast overtop.
    • Stir and let sit until frothy.
    Step 2
  3. Make the dough

    • Whisk together the flour and salt in a bowl.
    • Pour the yeast mixture into the bowl of a stand mixer, then add the remaining sugar, Greek yogurt, butter, eggs, vanilla and the flour mixture.
    • With the dough hook, mix on low until barely combined, then rest.
    • Mix on medium until the dough is elastic and smooth, adding more flour a spoonful at a time if too sticky.
    Step 3
  4. Let the dough rise

    • Transfer the dough to a lightly greased bowl.
    • Cover and rise in a warm environment.
    Step 4
  5. Make the cinnamon filling

    • Mix together the butter, brown sugar, cinnamon and vanilla until well combined.
    • Grease a 9x13 inch baking pan with butter.
    Step 5
  6. Roll, fill and shape the rolls

    • Flour your work surface and turn out the dough, rolling it into a rectangle.
    • Spread the cinnamon filling evenly over the dough, leaving a small border, then dollop the apple pie filling on top and spread it into an even layer, pressing the apples down slightly.
    • Starting from the long end, tightly roll the dough into a log and cut it into rolls about 2 inches wide.
    • Place the rolls into the prepared baking pan.
    Step 6
  7. Proof the rolls

    • Cover the rolls and allow to proof until puffy.
    • Preheat the oven to 350°F.
    Step 7
  8. Bake the rolls

    • Warm the heavy cream in the microwave and pour it all over the rolls.
    • Bake at 350°F, then raise the oven to 375°F and bake until the tops are golden and the rolls are cooked through.
    Step 8
  9. Make the cream cheese frosting

    • In a large bowl, beat the cream cheese, butter, powdered sugar and vanilla until combined and smooth.
    Step 9
  10. Finish and serve

    • Remove the rolls from the oven and rest.
    • Spread the cream cheese frosting all over the rolls and serve.
    Step 10
