step by step

Method

  1. Make the crumble/streusel

    • In a medium bowl whisk together the flour, brown sugar, granulated sugar, cinnamon and salt.
    • Add the diced butter and work it into the flour with your fingers until the mixture resembles crumbs; squeeze a handful and break it apart for bigger chunks.
    • Refrigerate until ready to use.
    Step 1
  2. Make the apple pie filling

    • Combine the apples, butter, brown sugar, cornstarch, cinnamon and nutmeg in a medium pan over medium-low heat, stirring frequently until the butter is melted and the sugar dissolved.
    • Bring to a simmer, stirring occasionally, until the apples are tender when pierced with a fork.
    • Set aside to cool.
    Step 2
  3. Preheat the oven and prepare the dry ingredients

    • Preheat the oven to 220 °C (425 °F) and line a muffin tin.
    • In a medium bowl whisk together the flour, baking powder, cinnamon and salt; set aside.
    Step 3
  4. Cream the butter and sugars

    • In a large bowl beat the butter, brown sugar and granulated sugar until light and fluffy.
    • Add the eggs and vanilla and mix until combined.
    Step 4
  5. Make the muffin batter

    • Add the dry ingredients to the creamed mixture alternately with the milk, mixing until just combined.
    • Toss the chopped apples in the flour and fold into the batter.
    Step 5
  6. Assemble the muffins

    • Scoop the batter evenly into each muffin liner.
    • Top each muffin with a spoonful of apple pie filling, then sprinkle with the crumble and gently press so it sticks to the filling.
    Step 6
  7. Bake the muffins

    • Bake for 5 minutes at 220 °C (425 °F), then reduce the oven temperature to 175 °C (350 °F) without opening the oven.
    • For regular muffins bake an additional 15–18 minutes; for jumbo muffins bake an additional 25–30 minutes, until a toothpick inserted in the center comes out clean.
    Step 7
  8. Finish and serve

    • Optional: drizzle with caramel sauce, if desired.
    Step 8
