step by step

Method

  1. Slice the beef

    • Cut the flank steak nice and thin against the grain to shorten the muscle fibers for a tender bite.
    Step 1
  2. Marinate the beef

    • Mix the cornstarch and baking soda with the oyster sauce, soy sauce and neutral flavored oil.
    • Add the beef and give it a good mix so it is well coated.
    • Leave it to marinate.
    Step 2
  3. Make the sauce

    • Combine the soy sauce, dark soy sauce, oyster sauce, brown sugar, sesame oil, white pepper, beef broth and shaoxing wine.
    • Mix equal parts cornstarch and water for the slurry and set aside.
    Step 3
  4. Sear the beef

    • Get a piping hot wok with some oil.
    • Add the beef, flatten into a single layer and let it get a nice sear.
    • Once it is cooked along the edges, remove the meat and set aside.
    Step 4
  5. Sauté the aromatics and broccoli

    • Add a little more oil to the wok with the garlic and ginger and let them get golden brown.
    • Add the broccoli and sauté.
    • Cover until the broccoli turns a nice bright green.
    Step 5
  6. Simmer the sauce

    • Pour in the sauce and bring it to a boil.
    • Let it reduce, then stir in the cornstarch slurry to thicken the sauce.
    Step 6
  7. Add beef and noodles

    • Add the beef back in.
    • Add the noodles and give it one last aggressive sauté until glossy.
    Step 7
  8. Finish and serve

    • Top with green onion razzle dazzle.
    • Get a nice noodle twirl and enjoy.
    Step 8
