step by step

Method

  1. Infuse the gin with blue cheese

    • Crumble the blue cheese into the gin (or vodka) and stir well.
    • Let it marinate so the flavour infuses; overnight is ideal.
    Step 1
  2. Prepare the honey syrup

    • Microwave the honey with hot water so it mixes properly.
    Step 2
  3. Shake the martini

    • Add the honey mixture and ice to a shaker.
    • Pour in the blue cheese infused gin and shake well.
    • Strain into a glass and garnish with rosemary and olives.
    Step 3
  4. Soft boil the eggs

    • Lower the eggs into boiling water and cook for exactly seven minutes.
    • Transfer to ice water to stop cooking and make peeling easy.
    Step 4
  5. Prepare the dips and toppings

    • Mix the ranch dressing with bacon bits and honey.
    • Trim the roots of the spring onions and slice them.
    • Peel the eggs and serve with chili oil.
    Step 5
  6. Build the baguette bites

    • Slice the baguette and spread with basil pesto.
    • Top with prosciutto, brie, more pesto, kiwi and a drizzle of balsamic glaze.
    Step 6
  7. Assemble the snack plate

    • Arrange the feta, fried onions, salami, sweet potato crackers, roasted garlic, pesto, sun-dried tomatoes and eggs.
    • Add the prosciutto, crackers, balsamic glaze and parmesan.
    • Cut up the fruit and add the finishing touches.
    Step 7
