Method

  1. Season the shrimp

    • Set aside.
    Step 1
  2. Season the salmon

    • Pat the salmon fillets dry.
    • Rub each fillet with roasted garlic oil.
    • Season with paprika, garlic powder, oregano, Old Bay, Cajun seasoning, cayenne, salt and black pepper.
    Step 2
  3. Sear the salmon

    • Heat a large skillet over medium-high heat, then add the avocado oil and butter.
    • Place the salmon in the skillet and sear until golden brown and cooked through, basting with the butter and pan drippings.
    • Remove from the skillet and set aside.
    Step 3
  4. Cook the shrimp

    • In the same skillet, add the seasoned shrimp.
    • Cook until pink, opaque and cooked through.
    • Remove from the skillet and set aside.
    Step 4
  5. Boil the pasta

    • Bring a large pot of water to a rolling boil and salt it heavily.
    • Cook the pasta until al dente.
    • Reserve at least 60 ml pasta water, then drain.
    Step 5
  6. Sauté the vegetables

    • In the same skillet used for the salmon and shrimp, add the diced onion and bell pepper.
    • Sauté over medium heat until softened.
    • Add the garlic and cook until fragrant.
    Step 6
  7. Build the sauce base

    • Stir in the tomato paste until fully incorporated.
    • Add the Cajun seasoning, red pepper flakes, garlic powder, oregano, cayenne, salt and pepper, mixing well to coat the vegetables.
    • Deglaze the skillet with the bone broth, scraping up the browned bits, and stir until well combined.
    Step 7
  8. Make it creamy

    • Pour in the heavy cream and bring the sauce to a gentle simmer.
    • Squeeze in the lemon juice and mix until well combined.
    • Add the Parmesan, mozzarella and reserved pasta water, stirring until the cheese is melted and the sauce is smooth and slightly thickened. Taste and adjust the seasoning.
    Step 8
  9. Combine and serve

    • Add the cooked pasta to the skillet and toss until every piece is evenly coated in the creamy sauce.
    • Return the salmon and shrimp to the skillet and gently combine.
