step by step

Method

  1. Make the wonton sauce

    • Mix the soy sauce, rice vinegar, sesame oil, sesame seeds and chili oil together in a bowl.
    • Set aside until serving.
    Step 1
  2. Mix the filling

    • Add the ground pork, shiitake mushrooms, ginger, water chestnuts, scallions, egg, soy sauce, sesame oil, sugar, salt and pepper to a bowl.
    • Mix until evenly combined.
    Step 2
  3. Add the cornstarch slurry

    • Combine the cornstarch with the water and stir until the cornstarch dissolves.
    • Pour into the meat mixture and mix well.
    Step 3
  4. Fold the wontons

    • Fill a small bowl with water. Place a wonton skin in your palm in a diamond shape and put about a teaspoon of filling in the bottom corner.
    • Roll the corner up and over the filling about halfway, then wet the skin to the right of the filling.
    • Holding the skin on both sides of the filling between your thumbs and index fingers, pinch your fingers together and tuck the damp left side onto the right to seal shut.
    Step 4
  5. Boil the water

    • Bring a large pot of water to a boil.
    Step 5
  6. Cook the wontons

    • Place the wontons in the boiling water in batches, about 10 to 15 at a time depending on the size of the pot.
    • Cook until they begin to float and the internal temperature reaches 165 °F or higher.
    • Remove with a mesh strainer, shaking off excess water, and transfer to a bowl.
    Step 6
  7. Serve

    • Spoon some of the sauce over the wontons, leaving some on the side.
    • Top with more scallions and sesame seeds.
    Step 7
