step by step

Method

  1. Sauté the onion

    • Heat a little oil in a large pot.
    • Sauté the onion with a pinch of salt until soft.
    Step 1
  2. Brown the beef

    • Add the ground beef and let it sit undisturbed to develop a nice crust.
    • Break it up, then season with salt, pepper, the remaining seasonings and the garlic.
    Step 2
  3. Cook the tomato paste

    • Clear a space in the pan and add the tomato paste.
    • Cook it directly against the hot pan until it starts to darken, then stir it into the rest.
    Step 3
  4. Simmer the pasta

    • Add the broth and bring everything to a simmer.
    • Pour in the uncooked pasta, give it a stir, then cover and simmer, stirring occasionally, until al dente.
    • Add a few splashes of broth if it starts looking dry.
    Step 4
  5. Make it creamy

    • Pour in the cream and add the cheeses handful by handful.
    • Keep stirring until everything is super creamy and glossy.
    • Taste and season with salt and pepper as needed.
    Step 5
  6. Rest and serve

    • Let it sit for a couple of minutes so the sauce can really cling to the pasta.
    • Serve and enjoy.
