step by step

Method

  1. Coat the chicken in the seasoned flour

    • Mix the flour with the salt, black pepper, paprika, garlic powder, onion powder and cayenne.
    • Toss the chicken in the mixture until every piece is evenly coated.
    • Remove the chicken and set aside.
    Step 1
  2. Build the second dry coating

    • Add more flour, the cornstarch, the baking powder and the same spices to the remaining flour.
    • Mix well.
    Step 2
  3. Make the wet batter

    • Separate about one-third of the dry mix into a smaller bowl.
    • Add the sparkling water and stir until smooth.
    Step 3
  4. Double-dip the tenders

    • Dip each piece of chicken into the wet batter, then back into the dry mix.
    • Repeat once or twice, depending on how thick and crunchy you want the coating.
    Step 4
  5. Prepare the baking tray

    • Line a baking tray with parchment paper or place a wire rack on top.
    • Spray it with oil.
    • Arrange the tenders with space between each piece and lightly spray the tops with oil.
    Step 5
  6. Bake the tenders

    • Bake at 210 °C on convection mode (fan + top and bottom heat).
    • Flip the tenders, spray a little more oil and bake until golden and crispy.
    • Let them rest for a few minutes so the coating firms up.
    Step 6
  7. Make the honey BBQ sauce

    • In a saucepan, combine the BBQ sauce, ketchup, Worcestershire sauce, brown sugar, butter, honey and hot sauce.
    • Warm over low heat until smooth and glossy.
    Step 7
  8. Make the ranch dip

    • Whisk the mayo, sour cream, lemon juice, garlic powder, onion powder and dried dill.
    • Season with salt and black pepper and stir in the parsley.
    Step 8
  9. Sauce and serve

    • Toss the tenders in the sauce or brush them evenly.
    • Serve with the ranch dip.
    Step 9
