step by step

Method

  1. Season the roast

    • Pat the roast dry and season generously all over with salt, pepper, onion powder and garlic powder.
    • Turn it to coat every side evenly.
    Step 1
  2. Sear the meat

    • Set the Instant Pot to sauté and add the olive oil.
    • Brown the roast on all sides until deeply golden.
    • Lift the meat out and set aside.
    Step 2
  3. Prepare the vegetables

    • Wash the potatoes, peel them if you like, and cut into chunks.
    • Peel the onion and cut it into quarters.
    • Peel the carrots and cut into large pieces.
    Step 3
  4. Deglaze the pot

    • Pour in a splash of vinegar and scrape up all the browned bits from the bottom, that's the flavor.
    • Turn off the sauté function.
    Step 4
  5. Load the pot

    • Return the meat to the pot.
    • Add the potatoes, onion and carrots.
    • Pour in the beef broth, add the butter, the fresh garlic and the lemon juice.
    Step 5
  6. Pressure cook

    • Close the lid and cook on high pressure.
    • Let the pressure release naturally.
    Step 6
  7. Add the broccoli

    • Add the bag of frozen broccoli and close the lid.
    • Use the keep warm setting so the broccoli softens without overcooking, about 10 to 15 minutes.
    Step 7
